Cement board

I am putting a surround in and put plastic underlayment on then the cement board. Was planning to seal the cement board with Redgard. What will happen if I do that? or is the underlayment of plastic enough?

What type? Glue on, Nail on?
Both do not need tile board behind them.
A glued on only needed green board sheet rock no vapor barrier.
Nailed on needed nothing behind it.

I think you may have misunderstood Don's question/situation.

It is not recommended that you have both the plastic on the studs and a surface membrane too. The surface membrane would have be better, but too late now. Continue without the Redgard using a good modified thinset to bond the tiles.

Can you give some info on the tiles and the adhesive you plan to use?
