1" hexagon tile mat install question


so my project is a bathroom 5'x15' on a slab using the 1' hex tile mats. the tile has been ordered and shall be in mid week.
question 1 is on the proper trowel size to use. he said the tiles were slightly proud of 1/8" thick. I want this perfect so the thin set doesn't come thru the tile to the top.....
question 2 is if there are any hints to pass along....
