what do i use for leveling floor and how?

i have a 3/4 to 1 inch drop in different areas of my kitchen floor. I need to use a floor leveling compound over the plywood sub-floor. I have heard that the compound dry too fast to work with. I know there are different ones and want advice on what to use and how to use it. It would be easier to level my base cabinets if the floor were level to start with.

Before you do that, find the cause of the uneven floor and fix it.
Are the joists too light for the span? Do they need strengthening? Or has a support beam shrunk? Is the house settling?
