Mine was all structural. I removed everything then put in larger cabinets.

My cabinets are nailed to the wall and screws are in the trim underneath the cabinet, holding it to the wall. Mine are built in as well, so yours might be attached the same way. This is why i chose not to remove the cabinets. I think you are safe on removing the soffit, but be sure that no ductwork or electricl or plumbing runs through the soffit.
