That is a very bad idea. There are thinset materials that would work--Two part powder and liquid latex-
But the extra layer will cause problems --mixer valve will be to deep into the wall--how will you cover the exposed 'sandwich ' on the edges?
Usually shower walls are replaced because the are old and unsightly or failing.
Also the mixer valve is aging and could use replacing.
