leveling existing cabinets

we have custom cabinets in an older home, we are having siestone counter tops put in, the guy came out to make a template but said he could not do it until they were level, how do we do this to existin cabinets?

I'd be checking out the floor to see how out of level it is first.
Almost any older home I've ever worked on has a sag in the middle of the rooms from to long a span, under sized floor joist, insect or fungus damage.
Address this from under the floor and the out of level issue should go away.

Post some pictures----the odds are you will need to remove the old counter tops---un screw then from the wall and reinstall them properly----

Many of us have experience with that process---If that sounds like a difficult task--It's usually not---Pictures will help us explain the process.

A skilled cabinet installer could be hired if you aren't able to do this work yourself.
