Kitchen cabinets

I am hanging kitchen wall cabinets. I started with the corner cabinet. It is level and plumb. The second cabinet is level and plumb but I had to use shims. The third cabinet is the problem. It is level and plumb also. I had to use four shims together to make it even with the front of the others. Now it is about 1 inch from the wall. My house is very old, so I knew I would encounter problems. How do I hide that gap? Do I screw a piece of the filler there? What about the bottom? Won't it be very noticeable when I install the backsplash? This is not my first time hanging cabinets but I've never come across a gap so large.
