You should probably get permission or wait until they go on vacation before taking somebody else's kitchen apart but...

You can recycle cabinets and countertops from one kitchen to another if you luck out and they will fit without extensive modification. The more custom the cabinets the less likely they will fit your situation. Stock cabinets can often be reconfigured and may have spacers that can be easily trimmed to a different size or eliminated if not needed in their new home. A cabinet shop may be able to rebuild them smaller.

If things like sink cutouts will line up with plumbing, etc. granite counters can also be trimmed but you will probably want to have a stone shop do the work. The cutting blades and abrasives needed to work with granite are expensive and the process of cutting and polishing it is not a casual process.

The first thing you should do is measure the cabinets carefully and the space they are going into accurately as well. Then you can decide whether moving them will work and if it makes sense. It is definitely worth exploring as it could save you some money.

Are these box cabinets or were they cstom made for that kitchen?
If there box cabinets make sure it's an open stock cabinet. Which just means there still being made. Almost always your going to need one a differant size, a spacer, differant style cabinet to make it fit your kitchen. Without being able to find one the whole kitchen comes to a halt.

A simple piece of graft paper and all the measurements will tell you if it will work.

This is variable depending on the size of their kitchen relative to yours. It is possible to re-cut the granite, however you may not be able cut/modify the cabinets. It may be wise to see if you can buy extra cabinetry/fillers before going through with that option to avoid a problem down the road.

Just FYI in my area, kansas city, mo, it is only $2 more per sqft to buy the granite then getting an piece cut to your needed sizes.
