black grout on shower floor dries white

So black pebble tile floor with black grout, but I get a white chalky haze on the grout only???

And you will. Black grout is very difficult to work with and to live with. It will never remain black in a sower floor or any wet-area.

For the time being you could probably clean it with white vinegar and water but don't expect that to last.
