There is a piercing valve that some use on copper lines. It would go over your existing copper line and it pierces the pipe and allows the flow of water to go to your dishwasher. I hope I got it straight that you only want to add a dishwasher where there was not one before. You will still need to deal with the drain, and ensure you have a vent stack near enough to have air behind your water for your drain to flow.

There is a double outlet shut off valve available ---two 3/8" outlets ----

I would not use a piercing valve, they are prone to leaks. i'd go with what Mike suggested, something like this:

Those piercing valves should be banned---nothing but trouble.
