Is it really necessary to use a product made or can you just use pipe extended 12 to 18 inches upward on each leg?

Sure you can use a job made one, but why would you want to?

The house is a 1960's with galvanized piping and has "on the job" type installed throughout. We are remodeling a master bath, as a start, and I was wondering about duplicating what is there already.

I guess the answer to your question is, cost.

Thats why I said it was a manufacturer, but still... I believe every thing in that file. I will not make an arrester.
You can unscrew your chamber and use a Sioux Chief model that has threads- or not and add some under the counter later
