Two issues, pics attached:

1. Currently I have a 6" deep sink - would like to install an 8" deep sink.

At first I figured I would just eliminate the short piece of chrome pipe between the slip nut and the drain but then I realized I need that y-pipe thing in there for the dishwasher.

Any ideas? I've never done this before, I'd like to minimize my trips to Lowe's or the plumbing store (the part I hate most about any project!).

2. It looks the the PVC piping is permanently sealed near the bottom versus the use of slip nuts? Will I have to undo any of this to fit the sink and if so best way to separate these pipes?

Oh yeah...geez, I forgot - the new sink will likely have only one drain. So I guess I will have to redo all that PVC piping anyway.

Pretty basic job still? The drain pipe will still be much lower than the actual sink. I guess just removal of all that pvc piping could be an issue and then I'll have to install a new p-trap.

Who ever installed that sink did not do you any favors as all the joints are glued and there is no way to remove the existing trap without cutting.

Cut the pipe that comes out of the wall and leave enough to glue on a new slip trap adapter (1.5")

Parts list all 1.5 " (for a single bowl sink)

trap adapter
slip joint trap assembly
dishwasher tail piece
Sink drain basket (if it does not come with new sink)

PVC cement and primer

Add to that list a 1.5" slip joint tailpiece extension.
I don't think the DW tailpiece will reach the new trap. If it does, just return the SJ tailpiece.
Looking at the pictures again, it may not hurt to get a DWV 22 to center the trap
