shower and bath fixture replacement advice

shower and bath fixture replacement help
I'm remodeling our bath and will be completely replacing the fixtures in the shower stall and roman tub. The current fixtures were installed by the builder back in 1991 (Delta fixtures). I currently have all plumbing in the shower wall and the side of the roman tub exposed as all the tile will be replaced as well so there's good access to the plumbing. i.e. -All the drywall has been removed
My question is: I'll be using Delta replacement fixtures. Will the old valves have to de-soldered off? Or will the new fixtures work on the old valves?
Just trying to determine if it would be worth my while to do the plumbing work myself or hire a pro...I've done some soldering work before with good success..but the plumbing under the roman tub looks fairly complex.
Any ball park guess how much a pro plumber might charge?
