Running Pex Pipe?
What is the best way to run pex pipe through corner wall studs?

I don't think you will without crimping it closed. If you have to run it that route, carve out a groove in the framing, install the metal corner bend and cover with those metal plates so you don't put a drywall screw through it.

Running Pex Pipe?
As Ron6519 implied...is there another way to run the PEX so that it doesn't need to run through a corner? What are you feeding that requires it to go through a corner? If you have access, it would be better to run from below the floor ( i.e. basement) so that you can just stub up from underneath to feed the fixture above. This will allow nice soft bends in the PEX to eliminate any worries of "pinching" it.
