Question Roman tub faucet kit

I have the same situation as Tarheel: how to remove and replace a faucet kit on a Roman tub, with no access to the area underneath the tub deck. Assuming I can remove the old faucet and handles by undoing the set screws, how do I know what brand the valves are? Does it matter? In other words, could I replace an old Delta kit with a Moen kit?
