Pipe type and connection replacement

I'm replacing a vanity and was shocked to find that there is no supply valve on the line- looks like the hard lines from the sink are soldered directly onto the pipe (I can even see burn marks on the old wall from the torch).

My assumption at this point is that I'm dealing with copper pipes, because of the soldering- is that right? I think I just need to desolder these connections, maybe solder on a stub out and then a supply valve on the end of that (the current soldered connections seem to be flush with the drywall so I doubt I could get a supply valve on there without adding pipe). The drywall is all being replaced too anyway so I will be removing it before this goes down. Does this sound right to everybody? See pics.

Yes, you are right that they look to be soldered on. The best way to proceed is to find out where the shut off for those lines are, might be that it'd be the whole house shut off.

When you're ready, after the drywall is removed, you could just desolder the chrome from the copper, clean the copper to a like new shine, then add your soldered or compression stops (1/4 is the way to go these days), test and then carry on.

Thanks VIPlumber for the response. Just an update that this project is no officially completed! Practiced soldering on scrap pipe in the garage all week, then turned the house water off yesterday, drained the lines (this was the hardest part) and sweated on 1/2" copper couplers, a short length of new pipe, and 1/4 turn valves.
