Do not use pex to supply the spout. The fittings restrict flow and cause water to come out the shower head. Pex can supply the water to the valve, but hard pipe the spout and riser. Always, Always, Always follow manufacturers recommendations, even the code will tell you to follow the manufacturers specs.
A story: I was doing a flip house for the owner of the company I worked for. His partner said that it was ok to use pex for the spout. The renter who also worked for the company, started to complain that water was always coming out the shower head, even when they were filling the tub. We could not correct the problem without opening a wall.
