I'm wondering if I can get adapters to connect pex directly to a water heater or if i need to sweat a specified amount of copper coming out of the unit before I transition to pex?
If you have a gas hot water tank with a flue no plastic piping within 5 inches of the flue.
Since hot water tanks are supposed to be set between 110 F and 140 F you can tie directly to the tank using a brass pex adaptor. Usually it will be a 3/4 inch female by 3/4 inch pex fitting. It will screw onto your dielectric nipples that come with the tank.
Some areas are still anal in regard to this so it may not fly. But PEx is a house distribution approved piping. One thing to keep in mind it is not approved to be used on the T&P relief valve due to the possible 210 F temp relief of that valve.
