new plumbing in kitchen

I need to replace the plumbing in a foreclosed property I am redoing. The problem- no basement or crawl space under kitchen.
The joists are about 8" off the soil. no way I can crawl in there and my 8 yr old isnt good with plumbing .

How should I go about replacing the plumbing. I figure take up the floor (which is getting replaced) run the supply and waste lines.

We are in the midwest (cold winters) how should I go about protecting the plumbing from freezing?????
Any other concerns/suggestions?

Pull up the floor, replace the pipe, insulate the water line. Use the proper fitting for the drains and you should be all set.

Thats about it.
