New plumb job small bath remodel
SMall master bath. Will have shower only, commode and sink. Not very big, house was built in the 60's.

In time the whole house will need a re-plumb job, but while we have this room gutted, wanted opinions on what to re-plumb with: copper, PVC, pex or galvanized?

Whatever is used, it will be connected back to the existing plumbing, until it get replaced.

Thoughts please?

Pex supplys, PVC drains.
Galvinized is the last thing anyone would want to use.

Jc, should we expect any difference in supply to the fixtures via pex?

If you use 3/4" for the main runs and 1/2 for the supplys it will be fine.

Can you run pex on top of rafters? Or must you run thru them?

Really need to take the time and go back and add where you live to your profile for better ansewers.

If you talking about through an attic I'd never suggest runnin plumbing of any kind through any unheated space unless you live in a 100% frost free area.
Even then it's not a great idea. In the summer time all you cold water lines will be putting out hot water.
