Yeah.
It's a minor job to disconnect the tubing from each end and then re-route the tubing to where you want to have it. You may even be able to reuse the tubing if the distance is the same or less. Be careful to not kink the tubing when handling the soft copper tubing.
At the source... the copper is *probably* attached to a saddle valve.
These things are the spawn of the devil and should be eradicated.
Removing the saddle valve and then replacing it might be more than you can do yourself.
