What water line do i hook up the line for my ice maker to ?

anywhere you have an extra 1/4" connection with a valve. Sometimes they are under the sink, in the wall behind the fridge, or coming out of the floor behind the fridge. Sometimes they are under the house too, but I wouldn't really recommend that one if it's not there already.

Do i hook up the hot or the cold H2O line to it ?

I would think cold, since it is for the ice maker. Hot water would not work too good.
