How do you remove the center of the kitchen sink drain?

I am trying to remove what I believe is called the strainer of the kitchen sink, but only the top part. My sink is clogged and I want to have a bigger opening for better access with the pipe snake so I would like to remove this part. Below is a picture of the drain and what I am looking to remove is circled in red:

You don't want to remove that,go below the sink and remove the p-trap it's the u shaped part, and rod from there, get a bucket under it before you remove it,because there will be water all over if you dont.

The strainer isn't usually removed for maintenance but the P or S trap just below it is.

That is part of the strainer, and is not removable separately. Try a couple of large pots of boiling water with some vinegar in them first.

and try keeping an empty soup or tuna can nearby (mine is in the freezer) for pouring cooking grease into rather than running it down the drain
