Hole in granite for filtered water dispenser

Hi Folks. I have installed granite counter tops with a full depth ceramic sink. I want to re-fit a filtered water dispenser. As I see it, I have two choices. I can have a faucet come out of the wall behind the sink, but I cannot find a suitable (ie small relatively inconspicuous) cold water dispenser that can be wall-mounted. If anyone knows of one or how to fabricate one then that would be perfect.

Otherwise I have to drill a 1/2" hole in the granite which is siliconed to 3/4 ply.

1) How close to the edge of the granite can I drill without risking a chunk breaking off?
2) Do I need to buy suitable core bit or can I use a masonry bit?

(and there's no way to drill a hole in the sink)

I would only use an abrasive core bit. If you use such a bit, you can drill as close to the edge as you want or need with no risk of breaking the stone.
