Copper to PEX
 
I'm considering replacing 4-5 runs of copper with PEX. The #1 and basically only reason is to get them into the ceiling and out of the way so I can create more ceiling space via a smaller soffit.

What brand PEX is 'best' and what type of clamping?

I'm in the beginning stages so likely will have more questions.

What ever brand your local supply carrys will work.
Any of the clamping systems work fine just find out what's avalible localy and pick that one.
In my area I can get the crimp rings in any hardware store, box store, plumbing supply so I went with them and never had any issues.

Do I simply replace copper with the same size PEX?

Depends, no one here knows what's there now.
The supply to the water heater and all main lines need to be at least 3/4' and use 1/2" supplys.
If you have some silly double shower heads or fancy shower systems then run 3/4 directly to the control valve.
