I will definitely mock it up first. Just wanted to make sure that is the proper way to set it up. I would assume using the drop ear elbow with a brass nipple would give me some leeway as to the width of the tile and wall...

Use whatever set up will work. If you need to mock up a few setups, do it now. Once the pipes are soldered and the tile is up is not the time to find out there's an issue.

what is the best to use on the threads - tpae dope or teflon tape? I alos read about the best thing to use is Blue Block. Any recommendations?

Teflon tape works for me. Three or 4 rotations of tape and you're good.
