Broken pipe under basement floor

I plan to bypass the kitchen outflow pipe running under the cement basement floor but need to insure that waste and water do not backup into that pipe where it connects to outflow pipe when it is out of service. Any suggestions for sealing off the old pipe

I can cap one end easily but other end is under floor and connects to main outflow. do i have to break up floor where outflow from kitchen connects to main outflow in order to cap it?

Yes. And change the Y, or whatever is currently there, to connect to the new drain(s).

I would not bust up concrete just to cut out an old fitting. Put a cap on the pipe coming out of the concrete. I would think that would suffice.
