3/4" vs 1" pvc
 
I am running a water line from my house to a hydrant in a shed, the distance is about 250'. Should I use 3/4 or 1 pvc?

If you want to POSSIBLY tap anything else into it in the future it isn't a bad idea to upsize.

If you're just using a single hose bibb on it for now, you won't notice any difference, but depending on what you may or may not tap into it in the future, you may or may not notice.

Price the difference between 3/4" and 1" ;)

because of friction loss over a 250' run, go bigger

I would use 1" poly rather than PVC. With PVC in a 250' run you'll have at least 25 joints. That's a lot to bury.
