which should I install? Allure vinyl with adhesive strips, Allure Ultra that snaps together or Armstrong Luxe vinyl planking with adhesive strips? Which is most waterproof for pet accidents?

If you search for allure or allure ultra you will find plenty of information on them to decide if you want to use them or not.

to use allure your subfloor needs to be very flat

I only know about the Allure products. But after trying to get the click to stay on the new Allure Ultra, it probably will be easier for you to stick with the Allure with the grip-strip. It's less expensive anyway and has more of a selection.

Why not use a sheet vinyl like Flexitec? No gaps to collect urine and easier to install than planks.
