subfloor height build up

Not sure if this question fits better here or construction...

Remodeling our house and we are having some laminate floors installed. I'm doing all of the prep work, but I'm kind of stuck.

The house is about 140 years old and had several layers of flooring laid down over the top of each other. I ripped up all but the very last one. That one actually consists of two layers of pine boards (top layer is 7/8", bottom is 1")(varying in size from 6-16" wide and all of them about 10' long.)
I need to build this subfloor up so when the new flooring goes in it is on the same level as the adjoining rooms. There is a 3/4" height difference. The new flooring+underlayment will be 1/2". That leaves me with a 1/4" height to build up.
Will 1/4" plywood be stable enough? Or should I rip up the top layer of the pine board and use two layers of 1/2" plywood?

Plywood is always the better choice but in this case if all you are installing is new 1/2" (wood) flooring then add the 1/4" and call it good.

What exactly is the finished floor material you will be using. I guess I'm not aware of any that is 1/2".

The finished flooring is a locking laminate by Bruce and it's actually 8mm thick and our installer told us he is going to use an 1/8" underlayment. It's not exactly 1/2", but pretty close.
