I might consider doing solid hardwood and stain it to match the laminate you are putting in. Laminate only comes in a few varieties of moldings so it would be nearly impossible to make it look good on these steps.
Here is how I would do it;
Make stair nosings myself out of really wide pieces of oak. I would cut the radius on them and then router a rounded edge onto these pieces.
Then I would get some thin oak plywood and cut it into strips for the risers. These are bendable and would make installing these easy.
Install the risers first, then the nosings, then fill in the rest with wood flooring. Then stain to match the laminate you have and finish them with a polyurethane.
The only option I really see aside from this is to rebuild the stairs to make them square.
