PT plywood 4 subfloor, bamboo 4 finish floor

I recently replaced the rat slab with a proper steel reinforced slab in my late 1940's Sausalito home. I'm planning to put in a wood floor over a sub floor constructed of PT sleepers and 3/4" PT plywood. PT plywood is very wet (21%). Is it inadvisable to use or can it be dried out sufficiently with dehumidifiers.

I have also been advised to use 3/4" bamboo flooring for the finished floor because it's more stable than maple.

Please share your thoughts, keeping in mind that my location is a high moisture area.
