pier and beam coverings?

We have a pier and beam house. I would like to put tile or wood flooring in the dining room. Any suggestions for subfloor help? I don't want a cheap looking floor, but budget is important. Are there "floor leveling compounds" that work well? If so, what brand? Thanks.
