level a floor without leveling the house

Ok we bought this old place. The former owner passed away, so there was no one to give me information on the property.
The house needs a lot of work. First it needs the floors done. I called out 2 house leveling companies. Both said the nous couldn't be leveled without causing damage to the additions. The house was never leveled prior to adding on to it. This could result in massive damage. The only options I was given was, tear out the additions and then level the main part, or level the floor from the inside.
Well I can't just rip off 2/3 of my house. So I chose to level the floor from the inside. I just don't know how to do that.
I do know that the under floor is in good condition. The joints are in good shape and the sub-floor is decent, it does have some soft spots.
So my question is what do I put down to level out a floor?

How out of level is it?

You can take out the flooring, sister new joists level, and re-do the flooring. If the ceiling is high enough, you could cut tapered shims, put them down on top of the joist locations, and then install a new floor over that.

That would be a big job. If it's just funky in places (i.e., the corners), you can level it with a chisel and a sander.
