leave baseboard

Could you leave the baseboard on where it has been installed on top of carpet. and cover plank edge with quater round. It may leave 1/4 " to 1" gap under baseboard.

Sure; why not?

I won't see it (and neither will you).

But where you have a 1" gap you may need some big darn quarter round.
Maybe there you could put something else in behind the QR?

One trick you can do is install door stop molding first then add shoe molding.

Prime and paint or stain all trim first before installing so you do not have to work close to the floor. If it's painted use painters puddy to fill all nail holes.
