laminate v. door jamb question


Ok so I'm installing laminate in my house. I've finished off the basement (it was quick since all the vents are on the ceiling and all the doors are properly cased out), but I've come to a quandary of sorts with my upstair's doors. We live in a 1974 prefab home, where nothing is level, studs have been known to fall out of their placements, and tiles have been adhered to plain drywall (basically a house straight out of hell). All the upstairs doors (8 feet tall, straight to the ceilings) have zero casings on them, instead they have what looks like lumber attached to one another creating a zig zag pattern. Now I'd like to know is it safe to under cut these boards? I mean surely the doors strucural framing is inside the drywall, right? If I were to cut my laminate around, instead of under, there is sure to be some UGLY gaps, so I'm stuck. To cut or not to cut, now that is the question....

I'm sorry in advanced about quality or rotation difficulties, my technology hates me today

ALSO FYI the "wood-like flooring" is allure that is coming up so I can put the laminate down..(even with the great reviews that stuff sux)

anybody? I'm worried about undercutting and hitting the framing or a stud..

Your going to have to back up when taking those pictures.
That stairway makes 0 since to me.
And the casings look like there out of a 100 year old house with built up casings that needed to be stripped and painted 50 years ago.

If you plan is using laminet on a staircase it's time for a new plan.
