I'm renovating my old kitchen and bathrooms. Should my new floor go all the way across the rooms, under the cabinets, vanities, and toilets?

Yes---the advantages are many----all cabinets are the right height for appliances.
Faster flooring install.

No chance of hitting the new cabinets with underlayment--tools glue--grout --thinset --whatever.

If something ever leaks --the water will be on top of the floor, not under it.

Easier to trim cabinets.

BUT, dont forget to protect all of your new floors from falling tools, dragging cabinets, tubs, toilets and other heavy objects. watch out for those items that like to spill on newly installed floors like purple pvc primer.
