Help Me - Flattening/ Levelling Subfloor for Bamboo

The attached pic shows you the contour lines of the floor in the upstairs master bedroom (I'm not obsessive, my floor seems pretty screwed up). I want to ultimately put solid bamboo on there.

The "5" "10" etc numbers are in mm (each 5 mm is a little less than 1/4"). The distance from the "5" to the "25" is about 5 feet, which means that I have a rather random 3/4" drop over 5 feet in the floor. The contour shows that this is not a simple linear thing, but the result of even joists in one direction, and sagging in the other.

The change in level across the 12' width of the room is about 1 3/8 inches.

What the h*ll do I do with this? Shingles? Levelling compound? Thin plywood strips? Argh.

Thanks. The pic's pretty small when I adhere to the size limits.

As you move up the picture, you are moving inward away from the front wall of the house. The joists run left to right. The numbers have a "-" in front of them, that is, the "-25" area is the low spot for the floor.

Again, it's about 5 feet from the "-5" line to the "-25" line, which means it's a drop of 3/4" over 5 feet.
