HELP! with brick tile floor


I have a ceramic tile kitchen floor called "Country Brick". I love the brick look floor, but when it was originally installed the grout was lower than the tile and now I have grooves. Keeping the floor clean is impossible. I have finally decided to refinish the floor. I am going to take out the old grout and regrout, but want something to put over the entire floor that will make it smooth and easy to clean. I have a friend that did 4-5 coats of polyurathane...but not sure what I want to do. I just know that I want a kitchen floor I can sweep and mop!
Any help would be greatly appreciated!!
