flooring for coastal house

i live in a house on the gulf coast. after hurrincane ivan our subfloor and flooring was replaced. 5 years later the bottom side of the subfloor is rotted with black mold. we had an engineer look at it and he told us it was from condensation from house to the outside. the house is on pilings. upon demolition we have discovered a second problem. under the vapor barrier the subfloor is rotting from the top of the plywood as well as underneath. the laminate is contaminated with mold in the seams. so our plan is to replace the subfloor with new plywood, treat, & insulate with a spray foam insulation that is water & fire proof. so this leads me to my question. what is the best flooring to put in my house as the laminate has proven to be to humidity sensitive. i need to have a floating floor so tile will not work. is bamboo or cork flooring my answer?

Cork is soft underfoot, does not require a lot of maintenance, and not easily damaged by sand.
