When installing 1/4" cement board to the subfloor (3/4" plywood), does the cement board also need to be screwed into the joists or just into the plywood?

You also need to tape and float the seems so tile adhesive doesn't "bleed" through the cracks while drying, good luck.

Concrete board is set into fresh thin set mortar, fastened and then taped with the special fiberglass mesh tape. What brand board?

Nail or screw into the subfloor only, not the joists. Use the 1 1/4" screws made for them.
