Build A floor over a uneven Concrete slab

New member who just purchased his first house, a 100 year old 1500 sq ft country house. Now for the projects:

First big one, of course many, many small ones as well, but here it is:

One of the big bonuses of the house was that it has a 11x37 bonus room that was once a sun room. I want to convert it to the master and bath with a small laundry room. The issue is that the slab is in great condition but not level. It appears that that there is about a 1/2-3/4" drop in areas of the floor and I will need to get this level. My thoughts are:

1) I know that there are self leveling concrete options but that would be pricing with the size of the room. so I have been thinking about using a laser level to find the high and low spots. Frame in the outline of the new floor and then cut each joist to the outline of the uneven floor. I am thinking about using 2x8' which would level it up with the floor of the main house.

2) I will need to put a vapor barrier in and not sure of the standard plastic is the best option or is there something better?

3) Options for insulation?

Is this approach above even the best option for this type of project?

I am good with my hands and have tackled tons of home projects but this is the first of this type so looking for advise.

Thanks
Steve

ok. idk what,if any, vapor barrier and/or insulaation you should use.

but the joists. build the entire joist structure. then use a self leveling laser and go around and shim up the low spots.

Sounds like a plan. Much easier than doing profiles joist to the concrete
