Backsplash install, will this be OK...

I have OSB meeting sheetrock. The OSB was behind a soffit that was removed.

the OBS meets the sheetrock and there is a small gap. Do I need to fill that with anything, or will the mud from the tile do that? Is it ok that there are two different surfaces?

mud will fill it fine, BUT no tile over OSB (Advantec is a type of OSB and is fine for tile, but you will not find this on a wall)

is there any option for this? It is next to impossible to get out as it runs behind my hood and cabinet's. The total size is about 3" x 8" on either side of the hood.

The hood is tapered between the two cabinet's on the side.

I have a pic, but dont know how to attach.

you will be okay. Or install 1/4" cement board over the entire are which will give you a better job overall.
