Antique Yellow Pine Planks: Shiplap?

We're buying a bunch of restored yellow pine planks. 6-10 inches widths.

Should we shiplap them or just leave them? (We live in the north east.)

...we'll be face nailing with cut nails, and straigh-up tung oil.

Thanks.
