110 year old slightly uneven wood floor - sheet vinyl or tile vinyl?

The factors:
110 year old wood floor, slightly uneven, with obvious small gaps between planks, but still solid.
Only bathroom. So I have to get this done either in easily seperateable stages (with use of toilet/tub 80% of the time), or all at once.
I have to tear out the two layers of peel-and-stick tile as well before laying new flooring.
Claw foot bathtub... Possible warping of tiles under feet?
Odd P shaped bathroom layout.
I am working on my own, with occasional help from my husband (with things such as moving toilet/tub.

I much prefer the look of groutable tile vinyl over the sheet vinyl.

What would you do?

Thanks bunches!
