Kitchen Vent Hood Requirements?

We have been remodeling our kitchen and we removed the wall that the original vent hood was on to open up to the family room. We have since purchased and installed our new gas stove and cannot use the vent hood because the ceiling is too high. Does anyone know if there is a standard code that we must have a vent hood in the kitchen?

I dont know of any code requiring it but you can run a convection
type if your stove is that type- The air is drawn down through the center
of the stove-you run the ductwork down and out along basement joists.???
