Can I wire a garbage desposal to work without using an electrical wall switch

Sure! But your utility bill will surely rise from running a garbage disposal motor 24/7....
How do you plan on turning it off with no switch?

You could wire the switch inside the lower sink cabinet. That way it won't be visible. Or you could use a disposal air switch.
