restaining oak cabinets

i want to know if i have to totally strip off all color to restain my cabinets darker ? i sanded them but the stain is blotchy

You will never get all the stain out of them so do the best you can to minimize the blotchiness. Experiment on the back sides with the new and darker stain. I am not wild about them for everything but you might try gel stains too.
