Please help with paint prep

I recently bought an old San Francisco home and am trying to prep things to re-paint. Of course, there are multiple layers of bad paint jobs to deal with, and while I'd love to take all the moldings/trim down to bare wood, there's honestly so much that it's just not feasible.

I'm having 2 issues I really need help with:
1. The "line" where the moldings/trim meet the walls is never precise 90-degrees...usually it's a slope of old paint jobs. As such, in areas that I do need to strip to bare wood, I'm unfortunately also gauging out some of the wall paint and wanting to see if there's a way to avoid this or if it's normal. *See the first 2 pics at link below.

2. The doorway woodwork is terrible...again, multiple bad paint jobs. I'm trying to figure out how I can address the really bad areas without having to strip all of every single doorway down to bare wood. *See the last 2 pics at link below.

Thank you SO much for your help...in misery here :(

When the walls/trim gets like that, you need a nice bead of caulk to smooth it out. Then you can also paint the bottom lip/underside of the crown the wall color. Yo may need to do that with some of the other trim I see in this pictures.
