painting skimmed walls
My wife and I had the knock down texture removed by a company. the walls are left all white. Now typically there would be drywall and tape and mud, but these walls are all mud. any special instructions to priming and painting?

I would prime with Gardz, in this case maybe 2 coats, then 2 finish coats.

While I won't argue with Gardz- I will ask what is the sheen of the paint you plan on finishing with?
Gardz will be great for a seal for an eggshell finish , you can even add about 25% of your finish coat to it to give a little color ( depending on paint compatibility) .
But if you are going flat that might be overkill. A good drywall primer that is flat would be sufficient.
Why, I just skimmed and primed a bath myself today. Used Zinsser Zero 123 as my prime. Worked as expected, will paint eggshell tomorrow.

How about if i use PVA with a tint for the flat walls. most will be flat. only the kitchen will be semi. I was told a tint might not have me having to do two coats. I prefer Sheman williams. Your preferences would be welcomed. thanks. It's a big job as the WHOLE home was resurfaced.

With a skim, prime and 2 finish is the norm. i almost never use a PVA- go for more the sealer-primers, But then i also almost never finish walls in flat.
Just don't use crap materials. You sound like you had a nice job, don't cheap it out now.

Sheman? Williams, Don't say that to them.
Sometimes I just don't have anything productive to say.

Look up your closest paint supplier. Patronize a locally owned business (if they treat you right) and buy a TOP quality product.
